So we bought an electric smoker and one of my all-time favorite foods is prime rib. I have made it in the crock pot and it turned out like dry roast beef and I was super disappointed. So when Chris decided to bring home a prime rib and tried in the smoker I was very hesitant as my prior tries making it turned out very bad. I decided to figure out how to make it to where it was just like going to a Prime Steakhouse but being able to eat in your own home.
So Here is what we did and boy it turned out amazing!!!
Start by preheating the smoker to 250°. I used Apple wood chips for a less smokey flavor.

Then begin to prep the roast. Start by mixing thyme, rosemary, salt, pepper, minced garlic, and softened butter in a bowl. I used 1 teaspoon of each seasoning.



Then rub all spices and butter on roast. Put the roast in a disposable pan with about a cup of water or homemade au jus to keep the roast moist while smoking.
Cook roast to internal temp of 125° for a medium finish. Which is about 2 1/2 hours. Remove roast and let sit for 5 minutes. Slice and serve.

It was so yummy. We will definitely be doing this again and soon! Enjoy everyone!
